Ashley Evans
My name is Ashley Evans, I am the Owner and Home-style Baker at Miners Pizza Co., my specialties include mini cheesecakes, cookies, brownies, pies, and all the other home- style comfort sweets and treats you can think of.
For as long as I can remember I have always enjoyed being in the kitchen creating hearty comfort style meals and sweet treats alike. I didn’t really tap into my passion for baking until about 6 or so years ago, and things just kind of happened! I grew a fan-base persay, a following of people that loved my baked goods and encouraged me to shoot for the stars so that’s exactly what I did!
I purchased Miners Pizza Co. In February 2024 with one goal in mind, continue rolling out amazing take and bake pizza BUT add in my home-style baked goods while putting together a bakery team that can offer it all.
Thus Miners Pizza co has morphed into Miners Pizza + Pastry Co and we are so excited for what the future has in store!

Veronica Rodgers
My name is Veronica and I'm the Custom Cake Baker for Miners Pizza Co! I was born and raised in Tri Cities where I lived until 2012 then I relocated to Missouri until 2022 when i moved back home to the PNW. I’ve been a professional baker and cake designer for 11 years. I started my baking career working for Jilly’s cupcake bar in St. Louis Missouri where I learned half of what I know, the rest I learned working for McArthurs, which is one of the oldest bakeries in St. Louis. I love doing vintage style wedding cakes with elaborate drape work and tiny delicate designs. Being creative is my passion it’s what fuels me, I strive to make each and every cake better than the one before. I met Ashley via social media when she needed a cake last year and it was all up from there, we became a duo that has a vision and wants to offer great items to the Upper County and beyond!
Seeing people smile and get excited for something I create is the most rewarding feeling and I am so happy to bring a piece of me and my creativity to Kittitas County!

Lisa Zimmerman
My name is Lisa Zimmerman and I am the baker behind the custom, decorated sugar cookies at Miner's Pizza Co.! I'm PNW born and raised. I grew up outside of Elma, WA in an adventure loving family that spent our summers fishing through British Columbia, panning for gold in Montana, then, in later years, aboard a boat on Hood Canal. I LOVE being near the water and/or in "the woods" and I'm happiest when I'm spending time outdoors with my family.
Like so many little girls, I also grew up baking with my mom and grandma in the kitchen or spending days canning and making jam, as a family. Some of my warmest memories are of my older sisters, our mom and me getting together and doing our traditional holiday baking and candy making for Christmas. There was no shortage of laughter or messes!
Fast forward many years, a few kids of my own, and a busy life later, I started seeing these amazing, decorated sugar cookies a family member was making and I kept thinking, "I could do that!" I decided to give it a go for a graduation party in 2022. With loads of positive feedback, encouragement, and cookie requests from family and friends, "Lisa'z Perfectly Imperfect Cookies" was born and I've been on this cookie adventure ever since!
Joining the team at Miner's Pizza Co. and getting to turn this from a hobby to something I can share with this community is a dream! I absolutely love creating and personalizing cookie sets for all occasions and I look forward to working with you, making life brighter one cookie at a time.
